Ingredients: 4 tbsp olive oil; 1 large onion (diced); 2 tsp fresh rosemary (chopped); 8 oz portabella mushrooms (sliced ½ inch thick, gills removed); 1 lb white mushrooms (sliced); 14½ oz tomatoes (canned, diced); 3 tbsp tomato paste; 2 cloves garlic (minced); 1 tsp sherry wine vinegar; 2 tbsp butter (optional); 2 pinches red pepper flakes; salt and fresh ground pepper to taste
